Elk Steak and Eggs Benedict

I’m going to start with my dialysis treatment yesterday, Sept. 11. I received the treatment at Grand Junction, CO. I will rate the treatment a 5-kidney treatment, the best. They were wonderful. It was a large, clean, bright, cheerful unit, and the staff I dealt with, Pam and Gracie, were kind, gentle and very competent. After being trapped in the car for about 3½ hours on the drive to dialysis, I was anxious to get the treatment over. I was tired of sitting, my butt was asleep. I am determined not to talk only dialysis, so let me tell you about the elk steak I had for dinner the other night in Steamboat Springs. Karolynn cooked the elk perfectly (not overcooked, medium rare is the way to do it), and it was scrumpy (my word for delicious), served with some fresh corn on the cob and a crispy, fresh salad of different lettuces, tomatoes and onions, just great. I found out I loved the elk steak, and I hope I can find some in upstate NY. I can now check another item off my to-do list, since this morning I had for the first time ever eggs Benedict. I never would order it before because I don’t care for poached eggs, or more to the point, a runny yolk. I find, however, the older I get the braver I have become, and I was determined to try eggs Benedict. It was GREAT, the eggs and Canadian bacon, the English muffins all topped with perfect hollandaise sauce, I will certainly order again if I ever get to Brennan’s in New Orleans (which Gabriel has told me about), maybe in a couple years. They must have good dialysis available there. I’ll let Gabriel tell you about the fabulous day we had at the Arches National Park in Utah, what a day! I spent most of the day in awe and speechless (don’t laugh). Stay tuned for more.♥♥♥
